GLUTEN FREE COOKING CLASS

Gluten & Allergen Free Cooking Class


Jeffrey Larsen is a food stylist, recipe developer, pastry chef and cooking instructor, specializing in allergen free cooking and baking. Jeffrey has worked on a number of cookbooks and cooking magazines. His stand - out achievements, as a food stylist, are nine books for Williams-Sonoma. He also has worked with his colleague, Karen Shinto, on almost every issue of Sunset Magazine for the last ten years. In addition to teaching classes throughout the Bay Area, Jeffrey now consults with individuals and businesses on developing products, developing menus and creating allergen free kitchens. www.jeffreylarsen.com Day 1 - Friday Evening A two-hour question and answer; forum on the alternative grains/flours and why they are combined as they are. Recipes will be given for Jeff’s two all- purpose flour blends. Jeff will delve into how to set up gluten free kitchen and how to convert your favorite recipes to be gluten free/allergen free. He will also give you his best baking tips and tricks. To keep you well fortified wine and cheese will be served! After the event join Jeff and tour the famous Oxbow Public Market in downtown Napa and have dinner at one of two of Napa’s very own, gluten free restaurants! - http://oxbowpublicmarket.com/ Day 2 – Breakfast at the Inn Enjoy a beautiful breakfast prepared by the Inn on Randolph staff. If you are up early join Jeff in the kitchen as he prepares fresh muffins and scones. During breakfast, Jeff will share his recipes and techniques for making this happen easily using his favorite all - purpose baking mix, Pamela’s Bread Mix. He will give his formula for fortifying Pamela’s mix with additional whole grain flour. This not only adds nutritional value but also reduces the amount of sugar and salt. Late morning: Free time to enjoy downtown Napa Afternoon: Join Jeff in the beautiful Inn on Randolph gluten free kitchen for a class on making Gluten Free Pasta at Home. Jeff will impart the secrets to making satisfying fresh pasta from scratch and will share and teach his very own recipes for egg pasta and vegan pasta. He will show you all his techniques for making lasagne sheets, fettucini, spaetzel and raviola. This will be a hands - on class and we will be making butternut squash ravioli that we will then enjoy for dinner. Following the class we will enjoy the fruits of our labor and a gluten free dessert created by Jeff. Class Price: $250.00. Rooms at the inn are booked separately.
